ABOUT SAURY
The Saury Cooperage has been a family-run firm for four generations. Based in Brive, in the Correze region, it has a central location in relation to the wine regions and oak forests of France.

Marc Saury, the current company chairman, is a cooper himself and supervises wood purchasing, manufacturing processes and quality control.

Saury produces 50,000 barrels per year of the highest quality.

WOOD PURCHASING
Quality - all our staves are purchased directly from stave mill suppliers renowned for their quality, consistency and integrity.

Guarantee - each wood lot arriving at Saury is examined, referenced and tested to check it is free of contamination before being accepted by our staff.

Certification - since June 2004, Saury has traceability and certification by the CTBA that all wood used to produce Saury French Oak barrels is of French origin.

WOOD SEASONING
Maturing - each pile of staves is washed carefully and intensively with fresh water to extract all the undesirable compounds from the oak.

Seasoning - after washing, the staves join the 6,000 m3 of oak in our wood park, where they wait patiently, exposed to the weather, for the 24 to 36 months required for their seasoning.

CREATING THE BARREL
Flexibility - the selection and blending of wood, different toasting techniques and intensities are not just decided by the cooper, but are adapted to the expectation of the winegrower.

Consistency - each Saury barrel is assembled with a selection of fine grain oak from the centre of France, making each and every barrel perfectly reproducible.

DEDICATION TO QUALITY
Selection of the very best batches of wood from only the best stave producers.

Very strict quality control (visual checks and analyses) at all key stages in the production process by our four-person quality control department and by accredited independent laboratories (CTBA, Excell, Vector).

Guarantee the best possible protection against all the endogenous and exogenous contaminants: wood, environment, transport, containers.

• Individualised identification of every barrel
• ISO9001/Version 2000 registration
• HACCP process underway

Maximum reproducibility through:
• The guaranteed origin and meticulous grain selection and seasoning of our wood
• Systematic recording of the entire production process
• Close monitoring of the toasting process for every single barrel

SELECTIONS
2 year or 3 year seasoned oak – the stave wood is aged at the Saury wood park for minimum 24 or 36 months.
Fire bent or Immersion bent – traditional fire bending or bending through hot water immersion.
Toasting – Medium, Medium Plus or Heavy toast.
Saury Bourgogne – 3 year seasoned, fire bent, special Burgundian style house toast.

Sustainability is of significant importance to us and has been held close to our heart since the beginning. Thus, the major part of our wood comes from batches auctioned by the National Office of the Forests, the administrative organisation that manages the forests ecosystems and ensures preservation of the forests biodiversity.
